Offenbach/ Dolores, Colorado, September 16th, 2014 - As of July 2014 the German executive chef Max Schon is responsible for the culinary delights at the romantic ghost town Dunton Hot Springs in Colorado, USA. Max and his chefs Shane Lovelady and Daniel Sopiwnik draw on classical training to create a new menu every day, using local and regional ingredients, some from Dunton’s own farm and vineyard. In summer, he gathers wild mushrooms, chanterelles and boletus in the surrounding mountains. Guests at Dunton Hot Springs enjoy his creations at a long, antique table in the center of the Saloon – a tradition from the big cattle outlaws that are cherished by Dunton Hot Springs. As many chefs, Max first started cooking as a way to pay bills out of college after receiving a Bachelors degree in English. Some of his first kitchen jobs were in Durango, where he began to see cooking as a career and not just a job. He eventually worked his way up to sous chef at East by Southwest, Durnago’s first sushi and pan-Asian-restaurant. After several years working with Chef Sergio Verduzco, Max moved to San Francisco, where his culinary career began in earnest. Working at several Michelin starred restaurants, including the two Michelin starred Michael Mina, he spent several years in the Bay area, but the mountains of southwest Colorado called him back to Durango, where he became Executive Chef at the Strater Hotel. Max started at Dunton Hot Springs in July this year and brings with him Italian philosophy, German sensibility and determination to maintain Dunton’s status as one of the best hotels for food lovers in the United States.
